It's time to post






Since I can't remember my blogger sign in, I know it is time to post. Whew---what a Holiday. So nice, so fun, so stressful at times. The kids were great, and we are off to a new year, new challenges and new beginnings. The kids--older two--are playing Upward, so we are at the gym this winter---seemingly lots with two of them playing. They LOVE Iexcel.com and Iphone games---which I discourage (the iphone games anyway). Iexcel is awesome! Satch continues to conquer and destroy--my house. And I continue to be blessed----beyond measure. That's right----you read it and I meant it.

Airl continues his 2nd job as fill in preacher. (Check out Riversidechurch.com. and you can listen. Email me for the password.) Oh and yes, I have been in the kitchen, and taking pictures--but not both at the same time.

So, I'm waiting for my iphone to update so I can show you some pics! Who knew you were supposed to hook up periodically for updates? Where is my brain? On to the kitchen, oh yes, I've been cooking. How does fajita soup, roasted pork, Spaghetti and meatballs, Mexican chicken, Baby Back Ribs, homemade choc. chippers, and broc. cheese casserole sound to ya? Huh, huh, ?? Can I get an AMEN!

Fajita soup--make basic taco soup recipe only use a packet of Fajita seasoning plus 2T. of chilli powder, few dashes of cumin. It REALLY livens up the soup. It gives it a fresh lime flavor.
Baby Backs--Buy them on sale only!! Remove tough outer layer located on the back of the ribs. Sprinkle generously with desired Cajun seasoning or whatever favorite seasoning rub you have on hand. Rub the seasoning into the meat. Bake at 400 degrees in the oven for for 60ish minutes. (I was cooking 1 rack, split into two. I used a 9x13 lined with foil.). Remove from oven. Pour on your favorite BBQ sauce. Back to oven for another 15 minutes. Delicious--just look at the picture of MO!
Meatballs--Don't let meatballs intimidate you. 1 1/2lb. ground beef. 1/2 cup grated parmesan, 1/2cup Italian Bread Crumbs, 1 egg, red pepper flakes if desired. Mix together. Shape into balls of desired size. Bake on wire rack at 350 for 30min-1hr depending on size of balls. Throw into your favorite red sauce and enjoy over pasta.
