PLEASE TRY THIS!! Enchilada casserole.



Soo it is snowing--like crazy still. So what else to do but cook and eat. This was yummo and relatively EASY!!! Oh and before we get started somebody ask Mo how many times he has been bathed and changed today due to some unforseen circumstances in his pants??? Huh??? He's still cute though you have to admit. When will this end?? Nothing like a snow day at home
Enchilada Casserole
24 corn tortillas==I used white corn
2 large cans of red Enchilada Sauce--I like Old El Paso
1lb. ground beef browned with..
2-3 green onions chopped and mixed in.
1/2 large can of black olives chopped
16-24 oz. of cheese--shredded--I used Monterey Jack and Cheddar
1 can refried beans
Turn oven to 350. Grease 9x13. Layer in this order sauce---1/3 can or so to start, 6 corn tortillas, beef mixture,black olives, cheese, corn tortillas, sauce, beans (just dallop them on), cheese, corn tortillas, sauce, beef mixture, black olives, cheese, corn tortillas, sauce, beans, cheese, corn tortillas. Spread remaining beef (if you have any) followed by sauce on top. Sprinkle with remaining cheese. Spray foil with non stick spray and cover dish. Bake for 30 minutes, remove foil and bake an additional 30 minutes. Serve with fresh cilantro if you have it and sour cream. Yummy and much easier than enchiladas!
