REAL REAL SAD

So this last Saturday--exactly one week from my 32nd birthday--I washed my iphone. Yes, that is right, cold/cold 10 minute cycle. Yes, I did. I felt like my heart had been ripped out. It wasn't the phone---it was the 5 weeks of pictures I hadn't bothered to down load. I fall short in many ways as a mom,,, but by golly,,, each day is captured like 2-3 times a day in photos. I felt like the dog owner whose dog dies and never wants another dog because it hurt so bad to lose the first one.

Well, I'm healing. I'm cooking,--some delicious stuff---wish you were here I would share--the food--but not the recipes--because you see I have NO time to share recipes. But, I'll be back and better than ever. I'm photographing and I'm praying that ole' white rice will dry her out! Does anyone know any other tricks??

PLEASE TRY THIS!! Enchilada casserole.



Soo it is snowing--like crazy still. So what else to do but cook and eat. This was yummo and relatively EASY!!! Oh and before we get started somebody ask Mo how many times he has been bathed and changed today due to some unforseen circumstances in his pants??? Huh??? He's still cute though you have to admit. When will this end?? Nothing like a snow day at home
Enchilada Casserole
24 corn tortillas==I used white corn
2 large cans of red Enchilada Sauce--I like Old El Paso
1lb. ground beef browned with..
2-3 green onions chopped and mixed in.
1/2 large can of black olives chopped
16-24 oz. of cheese--shredded--I used Monterey Jack and Cheddar
1 can refried beans
Turn oven to 350. Grease 9x13. Layer in this order sauce---1/3 can or so to start, 6 corn tortillas, beef mixture,black olives, cheese, corn tortillas, sauce, beans (just dallop them on), cheese, corn tortillas, sauce, beef mixture, black olives, cheese, corn tortillas, sauce, beans, cheese, corn tortillas. Spread remaining beef (if you have any) followed by sauce on top. Sprinkle with remaining cheese. Spray foil with non stick spray and cover dish. Bake for 30 minutes, remove foil and bake an additional 30 minutes. Serve with fresh cilantro if you have it and sour cream. Yummy and much easier than enchiladas!

On a cooking note check this out! YUMMO and mega quantity. I think this recipe could definitely be modified to your preference----but the basics ROCK---alfredo sauce + spaghetti sauce+salsa! Loved it! Keeping up with the Joneses: Cheesy Baked Pasta. (I'm not sure I linked this correctly so just go to http://www.kendallandkeith.blogspot.com/ and look it up. You won't be sorry!!! I'm out to watch snow and decorate Valentine boxes.

Super Bowl Menu

Ok. So YUMMO. I seriously outdid myself tonight---and no pics to prove it---and no I didn't outdo myself but it was good!

Buffalo Chicken Roll Ups

Cooked Chicken shredded lightly seasoned with whatever:) I used seasoned salt.
Whole Wheat tortillas
Buffalo or BBQ sauce
Blue Cheese Dressing.

Okay, do I need to explain what to do here? Roll em up and enjoy! Delicious--much better than classic wings!

New To Me Cheese Dip

1 lb. GOOD sausage
1 block cream cheese
1 can Rotel tomatoes

Brown the sausage. Drain the fat. Add cream cheese and tomatoes. Melt together over medium heat. Enjoy!

Peanut Butter Choco-Nana Smoothies

1/2 banana
1 cup milk
2 T. peanut butter
2 scoops vanilla frozen yogurt or ice cream
Squeeze or two---of choco. syrup
extra ice if desired

Layer in order of ingredients listed and blend away! May need more or less milk, depending on desired thickness--can add bit of water to thin as well!

Today as we were leaving for church, I quickly threw 5 boneless skinless chicken breasts in the crock pot with a little water, maybe 1/2 cup and some seasoned salt and ground black pepper. I set the cook time on 4hrs High and walked into bliss after church! It worked perfectly! I drained off the broth, shredded the breasts, added our favorite BBQ sauce and served Chicken BBQ sandwiches for lunch. Yummo, quick and easy. I also had enough chicken for tonight's wraps and for sure 3 lunches this week--all because of a little planning and small effort this a.m. !

Tommorrow you may or may not get a picture of my snow bath yesterday! Yes, a snow bath. and it rocked!

Hot ham and cheese

PLEASE make this. I'm SERIOUS. These were OTT(over the top)!

6 large hamburger buns
1 lb sliced ham--any kind will do
1lb swiss or provolone cheese sliced.
(Feel free to adjust amounts of ham and cheese to your preference).

Make sandwiches. Place in greased 9x13. (I had to half one of the sandwiches to fit). Melt 3/4 stick of butter in small pan. Add 6-7 dashes of Worcestshire, 2 T. brown sugar, sprinkle of onion powder. Mix well. Bring to low boil. Remove from stove and pour mixture evenly over sandwiches. Bake at 400 degrees for 20 minutes. FABULOUS and so so easy! (The sauce makes the sandwich!)

So I am sitting here, past 10p, I need to be in bed. I want to post. I want to post so I remember the day. Lately, I've been showering all 3 together. It was hilarious tonight. Kate sitting on the shower bench, Brooks knealing in the floor and Mo going crazy. They love it. We just laughed. I only wished I had a camera and a dry shirt at this point.

I hope you eat a half price Happy Meal tommorrow. I hope you hug your babies. I hope you read the word. I hope the roses smell especially sweet. I hope you kick butt tommorrow no matter what you do!

On to food--We have discovered Nutella and the kids love it. I also have been mixing up their lunches a bit and that is fun! It doesn't have to be a sandwich every day! Also I hope you have been eating and buying Clementines/Cuties. They are so easy to peel and kids love them.

YUMMY-cheesecake pie

I wanted something quick, easy and yummy.

Cheesecake pie

1 shortbread or graham cracker crust
1 8oz block of cream cheese softened--I used 1/3 less fat
1 small container whipped topping--I used sugar free cool whip
1 1/2 tsp. vanilla
3 T. sour cream
1/3 cup sugar
Mix cream cheese, sugar, vanilla and sour cream until combined. Fold in whipped topping. Pour mixture into pie shell and refridgerate for 3 hours. Serve with fruit, chocolate or caramel sauce. (I ate mine with caramel.) YUMMY!

Since I can't remember my blogger sign in, I know it is time to post. Whew---what a Holiday. So nice, so fun, so stressful at times. The kids were great, and we are off to a new year, new challenges and new beginnings. The kids--older two--are playing Upward, so we are at the gym this winter---seemingly lots with two of them playing. They LOVE Iexcel.com and Iphone games---which I discourage (the iphone games anyway). Iexcel is awesome! Satch continues to conquer and destroy--my house. And I continue to be blessed----beyond measure. That's right----you read it and I meant it.

Airl continues his 2nd job as fill in preacher. (Check out Riversidechurch.com. and you can listen. Email me for the password.) Oh and yes, I have been in the kitchen, and taking pictures--but not both at the same time.

So, I'm waiting for my iphone to update so I can show you some pics! Who knew you were supposed to hook up periodically for updates? Where is my brain? On to the kitchen, oh yes, I've been cooking. How does fajita soup, roasted pork, Spaghetti and meatballs, Mexican chicken, Baby Back Ribs, homemade choc. chippers, and broc. cheese casserole sound to ya? Huh, huh, ?? Can I get an AMEN!

Fajita soup--make basic taco soup recipe only use a packet of Fajita seasoning plus 2T. of chilli powder, few dashes of cumin. It REALLY livens up the soup. It gives it a fresh lime flavor.
Baby Backs--Buy them on sale only!! Remove tough outer layer located on the back of the ribs. Sprinkle generously with desired Cajun seasoning or whatever favorite seasoning rub you have on hand. Rub the seasoning into the meat. Bake at 400 degrees in the oven for for 60ish minutes. (I was cooking 1 rack, split into two. I used a 9x13 lined with foil.). Remove from oven. Pour on your favorite BBQ sauce. Back to oven for another 15 minutes. Delicious--just look at the picture of MO!
Meatballs--Don't let meatballs intimidate you. 1 1/2lb. ground beef. 1/2 cup grated parmesan, 1/2cup Italian Bread Crumbs, 1 egg, red pepper flakes if desired. Mix together. Shape into balls of desired size. Bake on wire rack at 350 for 30min-1hr depending on size of balls. Throw into your favorite red sauce and enjoy over pasta.
